I know what you’re thinking… but yes I actually do cook… sometimes! Teehee. When I cook I make sure it’s something I absolutely LOVE to eat! This potato salad recipe is from my wonderful Mother-in-law who I love so much! I actually really didn’t even like potato salad before I had this recipe. It’s SO incredibly simple and the pay off is DELICIOUSNESS! She made it for me and my husband on one of our annual New Years Eve trips to visit them where they now live in Florida. Visiting them is one of our favorite get-aways. I know it’s one of the hardest things in the world for Clark to live so far from his family and only get to see his parents once a year. I can’t imagine! Our goal is to see them several times a year when grandbabies arrive! But anyways… back to the recipe!
Potatoes (usually I make a rather “small” batch and use 4)
Mayo (I use the olive oil kind)
Sazon (sin achiote) seasoning packets
1. Peel the potatoes
2. Add potatoes to a pot with water and boil
3. Heat those potatoes until you can stick a fork through it with ease
4. Drain and let potatoes cool
5. Chop the potatoes into little squares or however you’d like
6. Add mayonnaise & a tablespoon or so of vinegar
7. Add sweet onions, chopped very small
8. Start mixing and add each seasoning to taste
9. Taste the yumminess
I didn’t add exact measurements because this is really a taste and see as you go, and also depending on how many potatoes you add! Sorry for those of you who really like or need exacts. However, I can promise you I am no chef or genius in the kitchen and I can pull this off with ease! And potatoes of course are gluten free, so this is a perfect dish for me. I’ve been gluten free for over a year and seen huge results in my metabolism and overall feeling.
** After a couple years of making this dish I started to add a few extra spices and toppings of my own. Feel free to fry up some bacon and chop the pieces into bits for a savory topping! I also started putting a touch of paprika in my potato salad and even some garlic paste. My mom wanted to add some chives. What would you add? My mother-in-law’s recipe is absolutely delicious by itself, don’t get me wrong! Try it and see.

Speaking of Mother’s, like I said this is my Mom in law’s recipe. Her and I SHARE a birthday on May 10th which is also Mother’s Day this year! I wish we could be together but I will call her and be thinking of her all day! I love her so much! Plus she’s definitely cooks the most delicious food I’ve ever tasted.
