Don’t you just love wedding season?!? 5 save the dates on the fridge, RSVP deadlines all over the place and bridal showers galore!!! That’s been my life for the past two years. This weekend I attended my cousin’s bridal shower and I’m honored to be in her wedding! As part of my bridesmaid duties I signed up to make some finger sandwiches for the shower. I thought about what I would make but in the end just felt like saying “Wah wah!” [said in Charlie Brown’s teacher’s voice] Finger sandwiches just seemed so boring and typical. I want to make something unique and eye catching but also delicious and affordable.
I decided to make toast! Sounds strange at first right? But I have been seeing these gorgeous toast pictures all over the placed and thought I could definitely pull that off!
Here’s what I bought…
- 2 Loaves of bread
- Spreads: Nutella, Peanut Butter, Cream Cheese, and Olive Oil
- Toppings: Strawberries, Bananas, Tomatoes, Mozzarella, Basil, Cucumber, and Dill
I loved doing this because it’s very easy to be creative and come up with unique combinations using toast as a base! You can really go wild and figure out any combos that you love. I knew I wanted to do some sweet and some savory combos.
The first step in all of this is lightly toasting the bread. Be sure not to toast it too much because you don’t want it to get too hard. I just popped them in the oven on 350 degrees on a cookie sheet for a few minutes. Then I slice up all my toppings and get my different spreads on the toast.
First “sweet” combination: Nutella spread with strawberries! I sliced the strawberries thinly to make them look elegant on the toast.
Second sweet combination: Peanut butter spread with bananas! Classic and delicious!
Toast Tip: Before you put the bananas on the toast, sprinkle them with a little bit of lemon juice to help the banana last longer before turning brown.
First “savory” combination: Cream cheese spread with cucumber and a bit of dill! Again, slice thinly!
Toast Tip: I warmed up the cream cheese in the microwave just a tad so that it would spread easier.
Second savory combination: A bit of olive oil to moisten the toast, topped with mozzarella cheese, sliced tomato, and basil! YUM!
Mission accomplished! This is a more sophisticated and unique substitute for lame old finger sandwiches! You can bring these with you to any party or get together and everyone will find a combo that they love.
